What if we do not have gochujang for the bibimbap?+

Gochujang is worth keeping in the fridge - a tub lasts months and costs about $4. If you absolutely do not have it, mix Sriracha with a bit of miso paste or just use Sriracha straight. The flavor profile shifts but the dish still works. Order gochujang online if local grocery stores do not carry it.

Can these meals stretch to leftovers for lunch?+

Most can if you cook slightly larger portions. The bibimbap, teriyaki meatballs, and quesadillas all reheat well. The chicken cutlet salad and salmon are better fresh. The pasta and pork medallions are fine reheated if you add a splash of water before microwaving.
